Chia Seeds Pudding

My journey to find more low carbohydrate breakfast options that are also healthy and nutritious lead me to try out new things and do a lot of research. One of the discoveries was Chia seeds. Chia seeds pudding is now one of the healthy breakfast options in my menu.

Overnight Chia Seed pudding is very easy to prepare, customize, it is always nutritious and delicious. It is a gluten free and low carbohydrate breakfast that could be easily turned into sugar and dairy free also, or it could be a great “guilt-free” dessert option. It keeps me satiated. The pudding is loaded with healthy fats, fiber and antioxidants. This recipe for the Chia seed pudding has several super food ingredients, such as Goji berries, walnuts and blueberries. It is almost too healthy. 🙂 Give it a try and find your perfect Chia seed pudding/topping combination!

Ingredients

Leads to one serving about 340 calories

  • 15g – about 1.5 tablespoons Chia Seeds
  • 1 tablespoon of Dried Goji berries
  • 1/4 and cup of Unsweetened Almond Milk (you can add more for more liquid consistency)
  • 1/4 teaspoon Vanilla Extract
  • Dash of Ground Cinnamon
  • 1 tablespoon of Pumpkin seeds
  • 2 tablespoon of Chopped (Raw) Walnuts
  • Hand-full of Fresh Blueberries, about 1/4 cup

Directions

  1. Select a glass jar with a lid. Place Chia seeds inside, add dash of cinnamon, add rinsed dried Goji berries
  2. In a measuring cup pour almond milk and add a few drops of vanilla extract, whisk
  3. Pour vanilla almond milk over Chia seeds in the jar
  4. Stir well to make sure there is no air bubbles left
  5. Close the jar and store in refrigerator over night
  6. Next morning when ready to consume, get it out of the refrigerator and mix well to break apart clumps of Chia seeds and make smooth consistency of pudding
  7. Prepare your toppings – chop walnuts, wash blueberries
  8. Pour Chia seed pudding into a bowl or a cup, top with pumpkin seeds, chopped walnuts and fresh blueberries, mix well and enjoy!
