Blue Avocado Toast

If you don’t know what avocado toast is, you must be leaving under a rock. Avocado toast is more than just a toast, it is a trend, a lifestyle, a millennial must have. I am part of the problem… I tried many different versions of avocado toast in different restaurants, cafes, cities and even states. Some I really liked, some I didn’t care for. But it did not end there, I decided to expand my avocado toast resume and make my own. 🙂

I made a few versions, my own interpretations and it made me fall deeper in love with this dish. I learned that the sky is the limit when it comes to avocado toast. But I faced a challenge once I made a decision to limit my carbohydrates intake. I thought I had to end my relationship with avocado toast since it is mainly served on a traditional bread and I wasn’t ready to do so… I had to experiment with low carb breads. It can’t be that difficult, right? Right! It was an easy and seamless transition. For flavor combinations I love mix of blue cheese and bacon, bacon and avocado, tomato and bacon, tomato and balsamic reduction,…. I can go on – I find these combinations very appetizing and enjoyable. Since I made my Flourless Cheese buns a few days ago, I decided to share one of my recent avocado toast recipes and hopefully you will enjoy it as much as I do.

Ingredients

1 Flourless cheesy bun (Here is the recipe)

1 Avocado medium size

1/2 lime (juice)

2 Slice of pork bacon

1 Tbsp of Blue Cheese

1/4 cup Balsamic Vinegear (reduced)

2 Grape Tomatos

Salt, Black Pepper and Cayenne Pepper – to taste

Microgreens

Directions

  1. Cook bacon to your liking, let it cool, crumble and set aside
  2. Reduce balsamic vinegar over medium heat for 4-6 minute, until balsamic reaches thicker consistency; pour in a container and set aside
  3. Prepare avocado mash – take avocado seed out, place avocado in a bowl, add salt, black and cayenne pepper and lime juice and mix until well combined
  4. Slice grape tomato into thin circles, set aside
  5. Slice cheesy bun in half and toast it in the toaster
  6. Let’s assemble the toast – take one half of the bun, spread half of the avocado mash on top, lay tomato slices, sprinkle with bacon crumbles, blue cheese, microgreens and drizzle with balsamic vinegar reduction
  7. Repeat for the second half of the bun
  8. Enjoy!
