Today I am sharing another avocado toast recipe. As you can see, I wasn’t kidding when I said I really like avocado toasts and I eat and make them pretty often…This recipe contains simple ingredients and overall preparation is very quick and easy. I added some radish for a crunchy texture, since I am not always into a mushy consistency. This avocado toast can be great for breakfast as well as a mid day snack or light dinner. I ate mine for dinner and it kept me satiated for the rest of the evening. That is one of the reasons I like avocados. Even though, avocado is not the cheapest fruit, it is definitely worth every penny. Healthy fats are not only good for you nutritionally, they also keep you satiated and satisfied.
Ingredients
1 Flourless Cheesy bun (Here is the recipe)
1 Avocado
1/4 of Lime
1 Small radish
1 Boiled egg
1/2 tbsp of Hemp seeds
Sriracha (if you like it a little spicy)
Salt, black pepper, cayenne pepper
Microgreens (optional)
Directions
- Boil egg to your liking – I like my egg yolk soft, so I boil my egg for about 3-4 min. Once time is up, remove the egg from the heat, places in cold water to cool, peel the shell, slice and set aside (slicing chilled egg is much easier)
- Slice avocado, take the seed out, place avocado into a bowl, add salt, black pepper and squeeze lime juice. Mash avocado until desired consistency
- Slice radish thinly and set aside
- Slice bun in a half and toast
- Lets assemble the toast – take one half of the bun, spread avocado mixture, place radish slices on top in thin layer, place sliced egg, sprinkle with cayenne pepper and a few drops of Sriracha, sprinkle with half of the amount of hemp seeds, and, finally, top the toast with microgreens. Repeat for the second half of the bun
