I used to love bread and baked goods in general. Lets be honest, I still love them, but a few years back I was not in a good place with my appearance and I didn’t feel good overall. One of the reasons was I was eating too much bread. So back in 2016, I made a decision to change that. I decided to prioritize myself and my well being. One of the major changes I made was lower my carbohydrate intake, so bread was out of my diet for about year and a half. I was forced to explore and experiment to find a replacement that would satisfy my taste. So I found it. These buns are great substitution for flour dinner rolls. I also love using then as burger buns, sandwich bread or make a grilled cheese (yes, with more cheese).
Currently, I eat bread occasionally, but once I tried these buns I knew if I had to give up bread for the rest of my life it would no longer be a problem. The recipe is very versatile and delicious in every way you decide to enjoy it. Very easy and cheesy, quick and taste delicious!
I have a few favorite ways I enjoy these flourless rolls/buns:
- Enjoy as a dinner roll on its own
- Slice and toast, and use any spread of your liking – my favorite is mashed avocado
- Use for burgers or other sandwiches
- Make a pizza crust
Ingredients
1 Cup of Mozzarella cheese
2 Tbsp of Cream cheese or Mascarpone (the buns on the photo were made with Mascarpone, they turned just as good)
1 Egg
1 Cup of Almond flour
1/4 Cup of Flax seed meal
1/2 Tsp of Baking soda
Sesame seeds – optional
Directions
- Preheat oven to 4oo F and line a baking sheet with parchment paper
- Mix dry ingredients in a bowl – almond flour, flax seed meal and baking soda, and set aside
- Place mozzarella and cream cheese (or mascarpone) in a microwave safe bowl, microwave for 1 minute, mix until well combined
- While the cheese mixture is still warm (microwave for about 15-20 seconds to reheat if needed) add the egg and mix until well combined
- Add dry ingredients to the cheese mixture and mix until you get a dough like consistency
- Roll dough to about 1/2 inch thick and use a glass or any other form to cut out. Or, if you like to keep it simple just portion out the dough into 6 equal size balls, place them on the lined baking sheet and flatten slightly.
- Sprinkle with sesame seeds and press them in slightly
- Bake for 14-16 min, until golden brown
- Let it cool and enjoy!
