I find making these cookies fun and satisfying. The results never disappoint. In the past I used only butter, but this time I had some mascarpone so I decided to tap into my creativity and experiment with substituting a part of butter with mascarpone. I have to say, the results were better than I expected. Cookies turned out to be moist and delicious and combination of unsweetened and semi-sweet chocolate added a very nice flavor twist.
Ingredients:
1 cup of Almond flour
1 tbsp of Coconut flour
1 1/2 tsp of of Baking powder
Dash of ground nutmeg and ground cardamon (both are optional)
1 Egg
3 1/2 tbsp of Salted butter room temperature
2 tbsp of Mascarpone cheese room temperature
1 tbsp of Honey
1/2 tsp of Vanilla extract
1/2 cup of Chocolate chips ( I mixed Pascha 100% cacao unsweetened and semi-sweet chips)
1/2 cup of Chopped walnuts
Directions:
- Preheat oven to 375 F, line cooking sheet with parchment paper and set aside
- Measure butter and mascarpone cheese and leave it out in room temperature for about 15 min so it can soften
- Mix all dry ingredients – almond and coconut flours, baking powder and spices
- Once butter and cheese are softened, whip them together until combined, add egg and vanilla extract and mix well until combined. It will not fully blend, it will look almost like cottage cheese.
- Add dry ingredients to cheese and butter mixture and mix until combined.
- Mix in walnuts and chocolate chips
- Scoop batter to the cooking sheet and press cookies flat, about 1/2 inch thick
- Bake for 15 to 17 min
- Let cookies to cool for about 20 min and Enjoy!
